Cheesy Leek and Broccoli Bake

This can be a stand alone dish served as a main meal or a side dish to a roast or steak dinner. Its creamy, cheesy comfort food that can be adapted to suit you and your families tastes by using different cheeses. a mild cheddar for a mellow taste or a strong punchy one for a more robust flavour. You can add a little cream for a richer taste or a few chilli flakes for a little heat. You can use fresh or frozen broccoli. The choice is yours. I've used a Ninja foodi to steam then bake, but you can use the hob and grill / oven if you prefer. Why not give this a try and let us know how you get on in the comments below.  1 Large Broccoli head
 1 Leek
 2 tbsp Butter
 2 tbsp Plain Flour
 500 ml Milk
 1 tsp Mustard
 150 g Mature Cheddar Cheese
 2 pinches S&P
 500 ml Water

Prep:- Chop the broccoli into florets, rinse under the tap and drain.
Rinse the Leek and slice finely.
Grate the Cheese

Add 500ml of water into the inner pot of the Foodi.
Place the broccoli into the basket-I used the basket instead of the rack to save the smaller pieces falling through.
Place the lid on and turn the dial to Steam.
Set the timer for 8 minutes. Pre will show as it preheats and can take 3-6mns before reaching temp, then it begins to steam and cook for 8mns
When finished lift the lid and carefully remove the basket.
Add the broccoli into an ovenproof dish, cover andcset aside.
Drain any liquid from the inner pot into a bowl (this can be used later for gravy or soup)
Wipe the pot dry

Select Sear/Saute 3 on the Foodi
Add 1 tbsp of butter and let it melt.
Add the Leek and stir through
Add the garlic, season with S&P and stir through.
Fry till softened- 3-4 minutes appr.
Remove from the pot, add into the broccoli dish
cover and set aside.

Lower the Sear/Saute level to 2.
Add the remaining butter to the pot.
Add the flour and stir through for 2 minutes.
This is your basic roux.
To turn into a sauce....
Add a little milk and stir.

Continue to stir, adding a little milk each time, until it eventually changes from a lumpy paste to a smooth sauce.
This is a basic white sauce. To make it into a cheese sauce....
Add the mustard.
Add 3/4 of the cheddar and stir through until melted.
Taste and adjust the seasoning if needed.
Add more milk if it's too thick.
Pour the Cheese sauce onto the leek and broccoli.

Wash out the inner pot.
Place the cheese dish into the Foodi.
Sprinkle over the remaining Cheese and close the lid.
Turn the dial to bake and cook at 190° for 10-15mns or until the cheese has melted. (Mines took 12mns).

Carefully remove from the inner pot and place on a rack to cool slightly before serving.
This will feed 2 as a main dish with crusty bread to mop up the sauce.

Or feeds 4 as a side dish for steak,chops or a roast dinner.

Easy swaps:-
Broccoli for Cauliflower.
Leek for onion.
Mature Cheddar for any cheese.
Milk for plant based-soy/oat/almond
Foodi for hob and grill / oven.
