Mince Pies

A Christmas must have

 8 oz plain flour
 4 oz butter
 3 oz caster sugar
 2 eggs
 A little milk or water
 Mincemeat
 Icing sugar

Mix the flour and sugar in a large bowl

Add the butter and rub together until it looks like breadcrumbs

Add the beaten egg and a little water or milk to bind the pastry together

Wrap in cling film and chill in the fridge for at least 30 minutes

Heat oven to 220c

Grease your pie/muffin tins

Roll out the pastry on a lightly floured surface

Cut out 12 discs

Put these in the bottom of each

Add a spoonful of mincemeat to each

Cut out smaller rounds or shapes and place on top of the mincemeat

If using a full top seal the sides well

Brush with beaten egg or water

14

Bake for 15-20 minutes until golden
