Midweek Curry – Serves 1

Sometimes you dont want to go to a lot of bother for just yourself but fancy something tasty.This hits the spot. WARNING the curry paste in the pic is lethal so get the loo roll in the fridge beforehand and a jug of cold water to put out the fire in your throat

Ingredients

One pot potato and mushroom curry

3x sml potatoes chopped

Ix sml onion chopped

6-8 mushrooms chopped

1x tsp curry paste

300mlx stock

1xtsp Chilli oil

Coconut yoghurt (or milk.)

Directions

1Heat oil in frying pan,add onion and potato

2Cover and cook on low for 5 mns. Give them a wee shake occasionally to stop them sticking

3Add the mushrooms and let them cook for another 5mins

4Add the stock and curry paste letting it all simmer for10 mns or until potatoes are soft

5The sauce will thicken and reduce

6Just before serving add the yoghurt and stir it gently in

7Garnish with spring onion. Serve with rice or flat breads.
