Slow cooked Spicy Carrot and Pepper Soup

 5 x carrots
 1 x green pepper
 1 x yellow pepper
 1 x red pepper
 1 x onion
 1 x tin chopped tomatoes
 50g x sundried tomatoes
 1 x sweet potato
 500ml x chicken or veg stock
 3 x garlic cloves (chopped)
 1tsp x mixed herbs
 1tbs x Soy Sauce
 1 tsp x chilli flakes
 A handful of broth mix
 Crispy bacon to garnish (optional)

Chop all vegetables.

Add all ingredients to slow cooker

Cook on Low for 6-8hrs

Blend to desired consistency.
Taste and adjust the seasoning if needed.

Garnish with crispy bacon or cooked ham

Serve hot with some crusty bread on the side.
