Vegan banana bread

1 1/2 cups plan flour

4 ripe bananas

1 1/2 tsp baking powder

1/2 tsp baking soda

1/3 cup sugar

1/2 tsp cinnamon

1/2 tsp mixed spice

1/3 cup coconut oil.

1/2 cup of seeds, chopped nuts or vegan chocolate if you want


1pre heat oven to 350f 200c In a bowl add flour, baking powder , baking soda, sugar and spices NOTE ..... You can add more if you like or swap mixed spice for nutmeg

2in another bowl mush the bananas so there is no big chunks.

3melt the coconut oil and add to the banana mixture and mix well.

4fold the dry ingredients into the wet until combined. Then mix in any extra nuts, seeds etc you want

5 line a loaf tin and add batter and bake for 25-35 mins or until a knife/tooth pick comes out clean. Leave to cool a bit.

6Note.... I added oats on the top of mine before I placed in oven.
