A warming healthy and super easy soup!
1 TBSP oil
6 medium carrots
2 small onions
3 litres of stock - veg or ham
300g red lentils

Fry off your diced carrots and onions in the oil for a couple of minutes until they've softened a little

Add your stock and lentils

Bring to the boil and then reduce heat and simmer for 20 minutes stirring occasionally

Blend down with a hand blender to desired consistency

Serve warm with crusty bread
