i never know whether to call this a stew or a curry. It is delicious served with either rice or mashed potatoes and on occasion i have even added potatoes to the recipe xx Lorna xx
ALL recipes are based on a family of four.
sprinkle flour onto a plate
add half the oil to a pan and dredge the chicken in the flour
fry for 4-5 minutes
put chicken into a pot or the slow cooker
heat the rest of the oil and fry the onion for 5 minutes, add the chilli and garlic and f4ry for 2-3 minutes
add stock and deglaze the pan
tip the mix into the pot or slow cooker and add the butternut squash, thyme and bay leaves. Stir well and then cook for 45 minutes on the stove or 8 hours in the slow cooker on low
stir well and mash down the butternut squash slightly
add the creme frais or cream or yoghurt and cook for a further 10 minutes on the stove or 30 minutes in the slow cooker

Would a 500g frozen bag of butternut squash work I struggle cutting hard veg
