A great midweek dinner
Soak the joint In water to reduce the saltiness(1hr) then place in the slow cooker.
Add the lemonade and cook on low for 6 hrs
Remove from the slow cooker and, with a sharp knife trim off any fat and score the skin in a diamond pattern. Place in an ovenproof tray
Glaze- Mix the brown sugar with a little hot water till dissolved and add the soy sauce and marmalade, stir well then spread over the Gammon
Bake in the oven for 10mns at 200°. Remove ,turn the ham over ,spooning the glaze over again and bake for a further 10mns. Let it rest for 5-10 mns
Slice or shred if desired
Serve with new potatoes and veg of your choice, use any remaining glaze as a sauce.
Tip-replace lemonade with Ginger Beer
Tip- Can be boiled on stove for 1 hr 20mns
Tip- Replace lemonade with stock and put Gammon on a bed of veg( onion,carrot,celery ) along with some parsley. This can be a base for soup once Gammon is cooked- just skim off any scum that lays on top.
