Slow cooked Lasagne is a softer but no less delicious dish than is cooked in the oven and I think its my favourite way of cooking this now. I tried a variation of the white sauce by adding onions and lots and lots of cheese because no dish is ever spoiled by too much cheese 😄. Dry fry the mince to brown it and drain any water or fat
Meanwhile heat a tbsp of oil and fry the onions till soft and caramelised
Divide into 2 portions-put half in with the minced beef
Crumble in the beef cubes and the tomato puree and stir
Add the tin of tomatoes and the herbs.
Add the garlic and stir through
Add the oats and water then stir
Simmer for 20mns
Meanwhile add the flour to the rest of the onions
Stir through until they are coated in flour
Add the milk a little at a time,stirring to prevent any lumps
Continue stirring till the sauce begins to thicken. Turn off the heat.
Add the cheese. I used a mix of 3 cheeses-Cheddar,Mexicana and Smoked
Stir till the cheese has melted then add the Mustard and S&P
Stir till its smooth.
Turn on the SC.
Add a ladlefull of beef mince to the bottom of the SC pot and spread it out
Cover with Lasagne sheets breaking them to fit
Add a layer of cheese sauce onto the lasagne sheets and spread out
Add a layer of mince
Continue to layer -mince-pasta-cheese until the mixtures have been used
Cover with a layer of grated cheese -keep 1/3rd for garnish
Place a tea towel over the SC then place the lid on top. This prevents the mixture becoming soggy
Cook on low for 4hrs or high for 2
30mns before the end of cooking sprinkle over 2 tbsp of breadcrumbs and the remaining cheese and replace the lid.
Once cooked run a spatula around the edges of the SC and score through with a knife to help ease it out. Serve with mixed vegetables and garlic bread
Easy swaps:- Swap the oats for lentils
Swap the tinned tomatoes for passata
You can also bulk the mince out with any vegetables you like. I added some salad leaves that needed using up along with some shredded spinach.
