Bitesize pieces of frozen yoghurt and fruit are sweet and fresh and great on a hot summer day. A bit of nostalgia here as my Mum did these as treat for after lunch when we were children, as well as making other homemade icelollies with diluting juice etc. it's recently became trendy with dieters and fitness experts as it's so easy and has few ingredients. No cooking involved so this makes them a great one for the kids to do. The fun part is eating them before they melt all over your fingers but you could be really smart and put a lolly stick through them and make your own icelollies. The toppings can be anything you choose and you can layer them up too. I used frozen berries and chocolate buttons but its totally upto you. Its also a great way of using up yoghurt you find in the reduced section of the supermarket. The step by step guide is easy to follow so why not give this a try and let us know how you get on. Empty the yoghurt into a bowl, stir well
Add the honey and stir through
Add the vanilla
Stir well till everything is combined
Line a dish with some baking paper-this will make it easy to lift out and slice later. Pour in the yoghurt smoothing it into the corners.
Add your toppings-Frozen fruit-cut the bigger pieces in half, raisins and chocolate buttons.
Press them down a little with the back of a spoon or spatula
Place the tray flat in the freezer for 4-6hrs
Remove from the freezer, let it soften for 2-3 mns and cut into bitesize pieces or into bigger pieces and wrap in some baking paper to lick
They will thaw quite quickly so keep in the freezer until needed.
Easy swaps:- frozen berries for fresh strawberries, raspberries.blueberries etc
Chocolate buttons for chocolate chips or granola.
Plain yogurt for flavoured- If using flavoured yoghurt reduce the amount of honey used
