A speedy dinner full of flavour with lovely chorizo,crispy bacon, rice,veg and all held together with melted gooey cheese. This can be served as a main meal with the extra filling on the side, or as a side dish to accompany your main meal. The rice bulks out the recipe and makes enough to fill 8 peppers, but I prefer to have one pepper, and the rest of the filling on the side. The choice is yours. You can adjust the ingredients also to you and your families tastes using different cheese and rice, including the packs of microwave rice, making it even speedier as you don't have to cook these beforehand.The step by step picture guide is easy to follow so why not give this a try and let us know how you get on in the comments below. Prep:-Cook your rice.
Cook your bacon till crispy then chop into small pieces
Peel and chop the chorizo into small chunks
Slice the top 1/3 off the peppers,de-seed and discard the inner stem.
Chop the top of the peppers into small chunks
Chop the onion, garlic and spinach.
Spray an oven proof dish with the cooking spray, place the peppers upright inside and season with S&P , cover with foil and place in the Halogen oven to cook for 15mns at 175°
Meanwhile add the oil to a pan and add the onion and fry till soft (4-5mns)
Add the peppers and continue frying.
Add the garlic and chilli flakes and stir through.
Add the chorizo and fry till almost cooked (4-5mns)
Add the spinach and stir.
Add the cooked rice.
Stir till everything is combined.
Add the cooked bacon.(reserve a little for garnishing later )
Add the cheddar and parmesan (reserve a little for garnishing later )
Stir till everything is combined. Season with pepper,taste and adjust the seasoning if needed.
Remove the cooked peppers from the oven fill with the rice mix ,top with more cheese and return to the oven to cook uncovered for 10 mns at 175°
Remove from the oven,garnish with the remaining cheese and bacon and a drizzle of Sweet chilli sauce.
Serve warm on its own with the remaining rice mix or as a side dish with chicken or chops or burgers.
You can use any rice for this dish such as long grain, basmati, wholegrain or even packs of microwave rice-just add straight from the pkt.
Easy swaps:- Mature cheddar for mild coloured cheese, smoked cheese or spicy Mexican cheese.
Use cooked chopped potatoes instead of rice.
Add some jalapenos for extra heat.
