This started off as a side dish but quickly became the main part of the meal. A tasty and speedy alternative to a roast dinner or for any day of the week for that matter. This can easily be adapted to suit your families tastes and budgets. Don't like cauliflower? Use Broccoli or a combination of both. Bulk it out with more veg if you like. Prep :-
slice the onion
Shred the Spinach (optional) you can leave whole if you prefer
Grate the cheese
Add the Cauliflower to a pot of water. Bring to the boil then simmer for 15mns
Meanwhile grill or fry the bacon till cooked.
Once cooked, cut the bacon into small chunks and place in an ovenproof dish.
Add the butter and flour to a pan and stir to make a roux.
Add the milk a little at a time
Continue to stir till everything is combined and the sauce becomes smooth. Add 1/2 the grated cheese, cream cheese and the mustard and stir through.
If its too thick add a little bit more milk.
Meanwhile add the sliced onion on top of the bacon
Add the Spinach
Drain the cooked Cauliflower and add over the Spinach
Pour over the cheese sauce. Sprinkle over the remaining cheese.
Bake at 200° for 20mns. Or in a Halogen oven at 175°for 25mns
or until the cheese has melted to a golden brown.
Serve hot.
I've served with a salad and some garlic bread.
Easy swaps:-
Cauliflower for Broccoli or a combination of both.
Mature cheddar for and cheese.
Spinach for Parsley.
