Haggis Nachos

Nachos are a classic sharing dish to serve up when watching TV with the family. Take some Tortilla chips, add some salsa,guacamole and sour cream...maybe some cheese and jalapeño's or chilli. But why stop there? They can be adapted to your local cuisine by adding one or more ingredients...in this case Haggis! which is a great alternative to mince in Scotland. It adds a lovely flavour and texture to the dish that I think you and the family will love. Don't like Haggis? Swap it for Black Pudding. This may be a good way of introducing Haggis into your repertoire if you've never tried it before. It goes really well with the dips and is definitely a new favourite in my house. You can buy the dips etc but why not make them (-recipes on the website-)then you can truly adapt this to suit your families tastes.Why not give this a try and let us know how you got on in the comments below.  240 g Haggis-(4 slices appr)
 180 g Tortilla chips
 200 g Mature Cheddar
 100 g Salsa
 100 g Guacamole
 100 g Sour Cream
 1 Red chilli
 1 Spring Onion
 2 Cherry Tomatoes
 1 Handful of Spinach
 ½ Lemon

Prep:-
Grate the Cheese
Shred the Spinach
Slice the chilli
Slice the spring onion
Chop the tomatoes
Make the Salsa(recipe on the website)
Make the Guacamole (recipe on the website)

Fry the haggis on a med/low heat for 4-5mns

Turn over and repeat

Take off the heat.
Mash them down with a fork

Scatter 1/3rd of the Tortilla chips into an oven-proof dish

Scatter over 1/3rd of the cooked Haggis

Scatter over 1/3rd of the cheese.
At this stage you can pop the dish under the grill to melt the cheese if you wish.

Continue to layer up until all the chips,haggis and cheese are used.
You can keep a small amount to use as garnish if you wish.

Place in the oven and bake for 20ms at 180° or until the cheese has melted.
This can also be done under the grill if you prefer

Take out of the oven and sprinkle over the remaining ingredients-chilli,tomatoes, spring onion and a little more cheese. Squeeze over some lemon juice

Serve warm with your dips on the side

Or spoon them onto the top of the dish if you want to enjoy them oozing into the warm chips.

Sour cream for Garlic mayo
Tomato salsa for sweet chilli dip
Lemon for Lime
