Tomato Gnocchi with Asparagus

The full title of this is Rich Tomato Gnocchi with Parma Ham, Peperami, and Asparagus, but I thought that was a bit of a mouthful, so I shortened it 😀
This is one of those dishes that sounds posh but really isn't. It's really just mashed potato, dressed up to look fancy then I've added some Asparagus, a bit of Parma Ham and some Peperami.....yes you read that right....Peperami sticks that I found in the fridge that no one wanted any more, and I wasn't going to just throw out. They added a bit of protein and a smoky flavour to the sauce, which was lovely, and no one was any the wiser....bonus!
This is an easy recipe to adapt to you and your families tastes, and I'll add some suggestions at the bottom of the page. This amount serves 2 but the ingredients can be doubled and stretched to feed 4....or for a lower cost option, you can add some stock, and it can be turned into a lovely soup.
I've cooked this in the Ninja Foodi using the Sear/Saute setting, but this can also be cooked on the hob or in the oven.

 2 Potatoes
 150 g Plain flour
 1 tbsp Butter
 1 Onion
 4 Garlic cloves
 1 tsp Ginger
 400 ml Tin of Tomatoes
 400 ml Water
 2 tbsp Sweet Chilli Sauce (optional)
 1 tsp Paprika
 ½ tsp Chilli flakes
 120 g Asparagus
 60 g Parma Ham - 6 slices
 20 g Peperami - 2 sticks (optional)
 4 Spring Onions
 1 Handful of Kale (optional)
 1 tbsp Parmesan (optional)
 2 pinches S&P

Prep:- Prick the potatoes with a fork, then microwave until cooked (8-10mns)
Chop the onion
Chop the garlic
Grate the ginger
Trim the Asparagus by snapping or chopping the ends off.
Shred the Kale
Use scissors to cut the ham into small pieces
Slice the Peperami thinly on the diagonal so they look like longer pieces

Once the potatoes have cooled, remove the skin and place in a large bowl, then mash,....don't add anything to the mash.
Once you have a smooth mash, add the flour and mix through. (you can add an egg but I didn't have any)
Knead until it forms a dough
Roll it out on a floured board to a sausage shape
Cut into half-inch pieces.
Press them down with a fork until they are curved.
Set aside till later

Switch on the Foodi to Sear/Saute Level 3.
Add the butter, onion, garlic, and ginger.
Stir through.

Add the Parma ham, Gnocchi, tinned tomatoes, and water ( use the can to measure)
Chop up the tomatoes if using whole.
Add the Sweet chilli sauce, Paprika, and chilli flakes,
Stir through

Add the Asparagus. Let them submerge in the sauce, but don't stir.
Close the lid, lower the temp to level 2, and let it cook for 5mns. This thickens the sauce.
Open the lid and add the Spring onion

Add the Kale, but keep a little for garnish later. Peperami, S&P.
Taste and adjust the seasoning if needed
(I added a little more spring onion and water)

To Serve. Divide the Gnocchi and broth mixture into 2 bowls, place the Asparagus on top, and sprinkle over the Parmesan.
Garnish with kale.

Easy Swaps:-
Fresh potato for a packet of ready made gnocchi
Fresh potato for leftover mash.
Parma Ham for bacon.
Peperami for bacon
Onion for Leek
Asparagus for broccoli
Parmesan for cheddar.

Ninja foodi for stove-
Follow the steps, but use a large frying pan or pot and cook on Low as per instructions above.

For oven:- follow steps 1 and 2 then place in an ovenproof dish, cover and bake at 180° for 10mns or until Asparagusis cooked.
Uncover and follow the remaining instructions.
