Make me better Roast Chicken soup.

There's nothing nicer than a warming bowl of chicken soup that's made fragrant with fresh lemon, ginger and dill.
Borne from the necessity of getting rid of an ugly cold virus that plagued me for over a week, robbed me of my appetite, and curtailed my daily activities.
I had to get rid of it asap as I hate being stuck indoors.
The combination of flavours may seem a little strange but it was delicious. Why not give this a try, even if your hail and hearty....don't wait till your poorly to taste it.. im sure your family will enjoy it too. I've used the Sear/ Sauté element of the Ninja Foodi for this but it can easily be done on the hob or the Slow Cooker.

 150 g Cooked Chicken
 1 Lemon
 1 Red Onion
 1 Leek
 1 Carrot
 1 Piece of ginger (thumbsize)
 1 Handful of Dill
 800 ml Chicken Stock
 1 tbsp Cream Cheese
 4 tbsp Milk
 ½ tsp Black pepper

Prep:-
Chop the onion
Chop the Leek
Chop the Carrot
Grate the Ginger
Chop the Dill
Juice 1/2 the lemon and slice the remainder

Switch the Foodi on to Sear/Sauté 2.
Add the butter, red onion, leek, carrot, grated ginger, cooked chicken and sliced lemon.

Increase the heat to level 3, add the lemon juice and stock and bring to a boil.
Lower the heat to simmer (level 2), close the lid, and
let it simmer for 15mns.
Open the lid, add the Cream cheese and milk.
Add the pepper.
Stir through.
Taste and adjust the seasoning if needed.

Serve hot with a garnish of Dill.

Easy swaps:-
Red onion for white
Fresh Lemon for bottled juice
Carrot for broccoli.
Cream cheese for pouring cream.
Dill for parsley

Foodi for Hob- same method and timings.
Slow Cooker- 1 hr on High or 2 on Low.
