Heat the oven to 170’C and line a baking tray with baking paper.
Put all the dry ingredients (minus 20g of fruit) into a large bowl and mix together well.
In a separate bowl add the honey, coconut oil or butter and vanilla.
Microwave for 30 seconds or until the coconut oil or butter has melted then stir the ingredients together and pour over the dry ingredients.
Mix all the dry ingredients so they are well coated with the honey.
Tip into the prepared tin and press the mix down firmly with the back of a spoon so it’s even.
Bake for 20 to 25 minutes or until just golden brown on top then remove from oven and using another tin, press down again to flatten the mix. Leave to cool in the tin then cut into bars.
For extra indulgence pour over some melted chocolate before cutting.
