Cook the potatoes and then mash ( a potato ricer is great for this )
Let them cool
Sift the flour and salt into the potato and mix well
Make a well in the mash and add the egg, pepper nutmeg and herbs ( if using)
Mix well
On a board form the mixture into a fat sausage shape
Cut discs about a cm or so thick
Reshape if need be
Heat the oil or butter in a pan
Fry the cakes on both sides for about 5-10 minutes until golden
