Twice Baked Potatoes

Yields1 Serving
 4 good sized potatoes
 A good knob of butter
 2 egg yolks
 Salt and pepper
 6-8oz grated cheddar cheese
 2 tblspn double cream ( optional )
 1-2 tblspns melted butter

Heat oven to 200C

Prick potatoes all over

Put in oven and cook until softened ( about 1 hour )

Remove from oven

Cut tops from the potatoes

Scoop out the insides into a bowl

Mash down , add seasoning , cream ( if using ) and egg yolks , mix well

Mix in the cheese

Put the top of the potatoes into the empty cavity

Top with the cheesy mash mix , use a fork to create texture on top

Put on a baking tray and brush with a little melted butter return to oven for about 20 minutes

Serve with a salad as a main dish
