Slice the muffins and lightly toast them.
Cook the sausage patties or bacon.
Beat the eggs and pour into a small frying pan. Make a thin omelette. Then use a cookie cutter to make rounds.
Assemble the muffins.
Wrap in greaseproof paper and then tightly wrap in foil.
Freeze them.
To reheat from frozen
- pop in the air fryer for 10 minutes (still wrapped)
- unwrap and cook in the microwave for 2-3 minutes.
