Keralan Turkey mince Curry

Turkey mince is economical, low in fat, and very versatile.
You can use it to make burgers, bolognese, cottage pie, etc, but I decided to use it to make a creamy curry.
This healthy curry is quick to make (under 40 minutes) and great for busy weeknights when you don't have much time to cook! Its packed with lots of vegetables, and is mild too, making it the perfect recipe for introducing small children to spices.
I used frozen mixed vegetables (carrot, cauliflower, broccoli) as this cuts the cooking time down, and added some that needed to be used up from the fridge too( pepper, leek,spinach) but you can use any vegetables you prefer.
I also used the Ninja Foodi on Sear/Saute but this can easily be done in a pan on the stove too.

 250 g Turkey mince
 1 Onion
 ½ Leek (optional)
 1 tbsp Keralan curry paste
 200 g Frozen mixed vegetables
 1 Red Pepper
 1 tsp Dried Garlic
 1 tsp Dried Turmeric
 100 g Porridge oats
 400 g Coconut milk
 400 ml Water
 50 g Frozen Peas
 100 g Spinach
 2 tbsp Shredded coconut
 ½ tsp Chilli flakes ( optional )
 2 tsp Oil
 1 tbsp Butter

Prep:-
Peel and chop the onion.
Chop the Leek.
Slice the pepper.
Add 1 tsp of oil to the garlic and turmeric and mix to form a paste

Switch the Foodi on to Sear/Saute- Level 3.
Add 1 tsp oil and all the butter to the pot.
Add the onion and leek.
Stir through then add the curry paste

Stir through then add the minced turkey.
Break it up using a wooden spoon.
Stir through till its coated in the spices.

Add the frozen vegetables and sliced pepper.
Add the garlic/turmeric paste.
Stir through.
Add the Porridge oats.
Add the coconut milk then fill the tin with water and add that into the pot.

Stir through.
Add the frozen Peas,Spinach shredded Coconut and chilli flakes(optional)

Stir everything together.
Simmer for 20-25 mins.
Taste and adjust the seasoning if needed.
Too spicy? Add some milk
Too mild? Add a little more chilli flakes.

Serve with rice and poppadoms to scoop up the yummy sauce.
Enjoy!
