Turkey meat is relatively cheap to buy, which makes it a good alternative to more expensive cuts of chicken or beef. Its healthier too as it's low in fat, cooks quickly and is a great midweek addition to your meal plans.
This curry is full flavoured but mild enough for the children, so all the family can enjoy it.
I've used the Ninja Foodi to Air fry the meat, then sautéed it with the sauce, but you could just as easily do this in a pot on the stove. It's easy to adapt to you and your families tastes and is a great way to add or hide more vegetables if you prefer- I added some grated courgette as it needed using up and it blended into the sauce without anyone noticing it was there- win win!
I use Mayflower Curry Powder as it has all the spices I need in 1 box, so I used it for the marinade and the sauce, along with the peanut butter and sweet chilli sauce, keeping it nice and simple 😋

Prep:-
Chop the Turkey into 1" chunks.
Chop the onion into small chunks
Slice the pepper.
Grate the Courgette
Make the Satay sauce for later - add the curry powder, peanut butter and chilli sauce to a bowl, add a little water and mix to a paste.
Add the diced turkey to a bowl.
Add the curry powder, peanut butter and chilli sauce to the bowl.
mix everything together and ensure its all coated.
Cover with clingfilm, place in the fridge to marinate for at least 1 hr, or longer - (overnight if possible)
Add the chopped onion and marinated turkey into the Airfryer basket.
Switch the Foodi on to Airfry -180° for 10mns.
Stir and separate the chunks as they may stick together.
Add the sliced pepper.
Airfry for a further 5 minutes.
Carefully remove the Airfryer basket. Switch the foodi onto Sear/Saute- Level 3.
Transfer the cooked turkey mix to the inner pot.
Add the courgette and/or any other vegetables that you prefer.
Add the satay paste from earlier and stir through.
Add the water into the pot.
Stir through and bring it to the boil.
Lower the heat to Level 2.
Simmer for 5-10mns.
Taste and adjust the seasoning if needed.
Add the sugar if using.
Add the Spinach.
Stir through to allow it to wilt.
Add more water if you prefer more sauce.
Divide into 4 bowls and serve with rice and crackers.
Easy Swaps-
Turkey breast for Thighs.
Turkey for Chicken.
Mayflower Curry Powder for any curry powder, or paste.
Spinach for Parsley or Coriander.
