John wanted pasta for dinner and I wanted to use up some of the halloumi I’ve had in the fridge for AGES! This was gorgeous! Sweet and spicy and delicious! Tho if you are making it to share with young kids I’d probably half the amount of chilli flakes and Cajun spices
Put on a pot of water for the pasta. And cook it as per the pack instructions.
Dice the halloumi and add it to a wok with the chorizo, pepper and onion. Fry them off for 5 minutes then add the honey and chilli flakes. Cook for 5 minutes.
Then add the soft cheese, stock cube and Cajun spices. Stir until the soft cheese melts.
Once the pasta is cooked add some of the cooking water to the sauce just to loosen it a little.
Then drain the pasta and add it all together.
Serve hot or cold - delicious!
