00Spring Onion & Cauliflower SoupWhat to make when you have a bit of veg in the fridge or freezer and not much else. This shouldn't really work but it does. 00Slow Cooked Beef TeriyakiTeriyaki is one of my favourite Japanese dishes to do with beef. Its both savoury and sweet, with a salty tang that is delicious. It can be done as a stir fry for a quick and easy dinner, but doing it in the Slow Cooker let's the flavours develop and deepen more intensely, whilst it does all the work for you. This recipe whilst not totally authentic is easily adapted - I didn't have rice vinegar so used white wine vinegar, didn't have cornflour so used plain flour, added extra veg as it was begging to be used etc ... and this applies to adaptions to suit you and your families tastes- Use what you have available and it will still be delicious. 00Slow Cooked Tomato SoupThere's nothing nicer than a hearty bowl of soup on a cold day. Whether it's for lunch, dinner or just to warm you up after a brisk walk or a day at the footy. This Tomato soup is great because it can be prepped in 10 mins before leaving the house and be ready for you getting back in. It's great when you have a glut of tomatoes that need using from the reduced section, and not much else but, by adding a few store cupboard ingredients you have a filling bowl of goodness in no time. This recipe is easy to follow and can be easily adapted to suit your families tastes as I've given you a few options. I didn't have carrots so used a red pepper,didnt have lentils,so used oats etc....its so easy to adapt basic recipes to what you have available. 00Slow Cooked Roast PotatoesThe Slow Cooker is not your first choice to use when it comes to roasting potatoes but, it has its benefits. It's economical, frees up space on your cooker,it uses less oil and is safer too as not everyone can lift a heavy roasting tray from the oven. Not everyone has an airfryer or a big oven- some people don't have access to a cooker at all, so this can be an alternative as you don't have to par boil the potatoes beforehand. This came about on Christmas day when I had no space on the hob for another pot and the oven was full too....but I needed my roasties done as you can't have a Roast dinner without them...you just can't! I will use this method every time now as it's a lifesaver. The recipe is straightforward, although I've used some herbs/spices to enhance the flavour of the potatoes. 00Slow Cooked Salt n Chilli Shredded PorkPork is very versatile and this Shredded Pork recipe is no exception. It's also a little change to the usual BBQ marinade. Letting the Slow Cooker do the work means minimal effort for maximum flavour. Once cooked,it can be used in loads of different ways too- Use in Pasta dishes, add to burger buns, Serve as prepared with a side salad, use as a filling in tacos or pies. The choice is yours.
