00Beetroot and Tomato SoupThis is a very forgiving recipe. The principle ingredients are Beetroot and Tomatoes, but then I added a red pepper, some wonky carrots and brussel sprouts that needed using up (No, you don't see or taste them once they are blended), along with Spinach and Chives, and it made 4 bowls plus 8 for the freezer!
It's speedy, fresh, and full of nutrients. I'm sure you and your family will enjoy this recipe as much as mine did.
Whilst I've done this in the Ninja Foodi, it's just as easy to do on the stove or in the Slow cooker.
I used fresh beetroot that I had previously pressure cooked - you can find the instructions for this on the website.
It's easy to adapt this recipe to suit your own tastes.

Borne from the necessity of getting rid of an ugly cold virus that plagued me for over a week, robbed me of my appetite, and curtailed my daily activities.
I had to get rid of it asap as I hate being stuck indoors.
The combination of flavours may seem a little strange but it was delicious. Why not give this a try, even if your hail and hearty....don't wait till your poorly to taste it.. im sure your family will enjoy it too. I've used the Sear/ Sauté element of the Ninja Foodi for this but it can easily be done on the hob or the Slow Cooker.

E x 00Cream of Celeriac SoupI'll be honest, it's not the prettiest looking of the vegetable family, but looks aren't everything. This humble, ugly vegetable is very versatile. You can add it to soup, casseroles, traybakes, curries, or mash it for the creamiest mash ever.
It's a great low-carb alternative to potatoes.
I've used the Ninja Foodi Multicooker to Pressure Cook the ingredients for this soup as it's so quick, but then I transferred to a pot to blend, as its not advisable to do so in the pot itself, as the bottom is concaved and could be damaged. This extra step takes minutes but you could leave it chunky if preferred.
I'm sure your family will enjoy it either way.
I used a mix of red and white onions as that's what I had.....and It's just as easy to swap out some of the ingredients too, if you prefer..

E x 00Curried Cauliflower SoupCurried Cauliflower isn't the first thing that springs to mind when you are making soup, but I can promise you that it's delicious. This is a great recipe to use up that bag of frozen florets that have been languishing in the freezer for ages. It's also a relatively cheap recipe to make because you get more in a bag than you would if you bought fresh. I've used a Mayflower Curry Powder ( extra hot) as it has a blend of Curry powder,Coriander, Turmeric, Cumin, Chillies, etc, but you could use whatever curry powder or paste you prefer. It acts as a thickening agent, too, so it can stretch out a recipe to feed 6 instead of the usual 4, if needed. It's actually not very spicy at all, but adding the peanut butter calms the heat down, too. You could use the medium version if you prefer.
You can adapt this recipe by adding or subtracting any vegetables and herbs you like to suit you and your families tastes.
You can add potatoes, oats, or butter beans to bulk it out, too. It really is very versatile. (I added some slices of red pepper that needed using up)
I've used the PC part of the Ninja Foodi Multicooker as PressureCooking is not only speedy but it ensures maximum flavour too, but this can also be done in the Slow Cooker,Instant Pot, or on the Stove.

I've used a tin of mixed beans in a spicy tomato sauce as the main body of the soup and that makes it very filling and economical. The beans are a mix of
Cannellini, borlotti, pinto, flageolet beans and chickpeas and are a great source of dietary fiber and nutrients. The sauce isn't too spicy- more of a mild heat but the sugar will diffuse this, or you could add some yoghurt or cream if needed.
I have made this recipe loads of times, and kept the base the same but adapted the vegetables and beans- sometimes using baked beans-to whatever I have in at the time, and it never fails to be a hit. You too can add or subtract any ingredients you like to suit you and your families tastes.
You can add lentils or barley to bulk it out too. It really is very versatile.

E x 00Vegetable soupIt is sometimes getting harder to get bargains nowadays but when you do its a bonus.These soup packs are sold in most supermarkets for 80p-£1 depending on the content. They are also easy to pick up from the reduced section at a fraction of the cost. The problem is they tend to break down pretty quick so if your not going to use it right away throw it in the freezer to use at a later date. But this recipe will give you an idea how to bulk it out a bit so it doesn't get wasted.This pack ( carrot,swede,potato) was reduced to 10p-I added a few extra ingredients to bulk it out a bit and had a filling lunch in no time. I added some porridge oats- (to thicken it) and some milk- (to make it creamy without the calories) - this also combats the vinegar taste these pack have at times. I adjusted the cooking time also as the packet said 15mns but the veg was still hard so needed longer -45 mns appr. I got 4 portions from this and it was delicious and filling. If you wanted to make this vegetarian then omit the bacon and use veg stock in place of chicken. The whole thing is finished off with crunchy baked croutons of crusty bread topped with melted, toasted cheese.....but this is FYF French Onion Soup so no brandy and no wine. Instead, we have beefy bovril cubes and a combination of Worcestershire and Soy sauce to make it as rich in flavour as any that you will get in a restaurant but at a fraction of the cost. I used a mixture of onions-some common or garden ones plus some shallots that I had left from another dish. I also used garlic butter on the bread before toasting the mixture of white and red mature cheddar cheese, adding another depth of flavour to this yummy soup. This is a great recipe that uses minimum ingredients but packs lots of taste and is very filling.
