King Prawns can be expensive but now and again, you get them on offer or reduced, and you want to make the most of them without ruining their delicate flavours. This recipe shows them off perfectly. I've kept this very simple by just using a few ingredients to marinade the Prawns with and pairing it with a little salad and some crunchy Tortilla crisps for added bite.
Tacos are a great summer dish that's light, full of flavour and very versatile.
You can add any toppings you fancy or keep it simple with just a green salad. The choice is entirely up to you and your families tastes. You can make it fun by putting everything on a board and letting them fill their own Taco shells, or wrap in greaseproof or foil for an authentic street food vibe.

Take the Prawns out of the fridge 30mns beforehand.
Shred the Spinach.
Dice the Spring onions.
Slice the Pepper.
Slice the Tomatoes.
Make up the Marinade by adding the oil plus all the spices to a bowl and mixing together. Add the Prawns and gently mix till they are coated in the marinade.
Place the Prawns in a single layer in the air fryer basket.
You may need to do them in batches to avoid crowding the basket.
Turn the Airfryer on and cook for 5mns at 180°
Turn them over and cook for a further minute to crisp up. Remove and wrap in tinfoil to keep warm.
Give the basket a wipe with a paper towel and place the Tortillas inside.
Tip- Place a wire rack over them to prevent them becoming loose and sticking to the grill.
Switch the Airfryer on and cook at 180° for 1-2 minutes- Turn them over and repeat for 1 minute.
Remove from the Air fryer and fold over whilst warm .
This helps them to keep their shape when assembling the filling.
Assemble the Tortilla:
Add a handful of spinach.
Add some sliced pepper and spring onion.
Add the sliced tomatoes.
Add the Prawns.
Drizzle over some Sweet Chilli Sauce (recipe on the website)
Serve with a green salad, some Tortilla crisps and a spicy chilli mayo dip.
