Beef Fajitas

another way to use up your leftover roast beef

Yields1 Serving
 1/2 green pepper
 1/2 red pepper
 1 medium onion
 A handful of mushrooms
 A few slices of leftover roast beef
 Fajita seasoning to taste
 Tortillas

Slice the peppers, onions and mushrooms

Cut the beef into strips

Heat a little oil in a frying pan or wok

Add in the onions , fry for 2 minutes more ping them moving

Add in the peppers and fry for about 3 minutes again keeping them moving

Add in the mushrooms and a tablespoon of seasoning.

Add a dash of water

Now add in the beef and more seasoning

Keep the ingredients moving

When the meat is heated through serve on warm tortillas . I serve with a salsa , some savory rice and grated cheese . Guacamole and sour cream are traditionally served too
