Cauliflower Cheese Bake

I love dishes that can be used as a main dish or stretched out to feed more as a side dish and this Cauliflower cheese bake is one of many that can do just that. Loved by young and old alike for its gooey goodness.

 1 Large head of Cauliflower
 75 g Butter
 50 g Plain flour
 500 ml Milk
 150 g Cheese
 1 tsp English Mustard
 2 pinches S&P
 100 g Breadcrumbs

Break the cauliflower into florets.
Grate the cheese.
Butter an ovenproof dish.
Heat the oven to 200°

Add the florets to a pan, cover with water, bring to the boil and cook for 5 minutes.
Drain and leave to one side

Melt 3/4s of the butter in a frying pan on a medium heat.
Add in the flour.
Whisk together and cook for 2-3 minutes.

Gradually add in the milk,
whisking all the time.
Add in the mustard and the S&P

When its thickened remove from the heat.
Stir through 3/4s of the grated cheese.

Add the cooked cauliflower to the ovenproof dish.
Pour over the sauce, ensure all the cauliflower is coated.
Scatter the rest of the cheese over the top.

Melt the remaining butter in a pan.
Add the breadcrumbs.
Stir until coated in the butter.
Sprinkle over the cauliflower cheese.

Bake for 20 minutes or until golden brown.

Serve warm as a main dish or as a side.

Tip-
Add more cheese if preferred.
Add some chilli flakes for a little spice.
