An easy midweek dinner
Cook the cauliflower and carrots in a pan of boiling water till soft(10-12 mns)
Meanwhile cook the pasta in a pan of salted boiling water for 8-10 mns till just soft
Heat the butter and gently fry the leek till soft.
Drain the cauliflower and carrots and blend till smooth.
Add the milk into the cauliflower mix and heat through
Add 2/3ds of the cheese and the mustard to the cauliflower and heat through.
Drain the pasta, add to a casserole dish and top with the buttered leek and chopped chives. Season with pepper. Pour over the sauce mix and stir through
Cover the pasta sauce with 1/2 the remaining cheese,Grill the bacon till crispy then chop into pieces and spread over the cheese, topping off with the remaining cheese
Bake in the Halogen oven at 180° or normal oven at 200° for 20mns till the cheese is golden and melted.
Serve on it's own, or with garlic bread, or chips and salad. It's also nice served cold
You can take out half the cauliflower and add it to the pasta before blending the rest of you want a chunkier mix.
Omit the leek and chives if you dont like but I think they give a depth of flavour to the dish
