Chicken thighs are cheap and tastier then breast - great in this recipe
Season the thighs with the chicken seasoning - let them sit for at least 20 minutes
Brown the chicken thighs in a pan in a little oil - or skin them and cook the skin and use the fat from that
Remove them to a plate
Add in the bacon and get it crisp - remove and put with the chicken
Add in the carrots , onions and potatoes .
When they have some colour add a little stock scraping all the bits from the pan.
Add in the rest of the stock and herbs
Put in the chicken and bacon and any juices from the plate , stir to combine
Add a little salt and pepper
Put a lid on and cook on the hob for about 45-60 mins
In the oven at 160c for 1.5 hrs
In a slow cooker for 6-8 hrs
In a pressure cooker for 15 mins
Add the cornflour water paste for last 15 mins and stir through
If using a pressure cooker add it when finished and sauté for 2-3 minutes . Only use 0.5-0.75 pint of stock
Check seasoning and serve .
