Simple, warming and tasty
Put a little oil or frylight in a pan and if using thighs seal them until coloured .
Remove from the pan onto a plate
Fry off the veg until just softening
Add in the stock and seasoning add chicken thighs if using
Let it cook until veg is softened about 20 minutes
Remove the chicken thighs
Blitz the soup
Shred the thighs and add to the soup
Or add the shredded cooked chicken and heat through
Can be cooked in slow cooker for 4-6 hours
Cook for 8 minutes in the Pressure cooker
