Banana Bread went viral during Lockdown, and is still a firm favourite in many households today. It's quite versatile too, as you can add chocolate, fruit, or nuts to give a little variety. It's a lovely treat with a cuppa or as a quick breakfast choice and is a great lunchbox addition too.
I've used the Air fryer but you could use your oven or slow cooker too, and you'll find directions at the bottom of the page.

Prep:-
Peel and mash the bananas with a fork.
Beat the eggs.
Grease and line a 2lb loaf tin, or use a liner, making sure it fits into your Air fryer. (you could use a silicone one or 2x1lb tins or even a cake tin)
Cream the butter and sugar in a large bowl until light and fluffy.
Add in the eggs and vanilla and mix through.
Fold in the flour and baking powder.
Mixing gently till it forms a smooth batter, but don't over nix
Now fold in the bananas and chocolate chips....keeping some aside for the topping.
Pour into the lined tin.
Sprinkle some chocolate chips on top.
Cover with foil or parchment.
Place in the Air fryer- making sure the foil is secured under the tin so it won't lift off-
Bake for about 30-40mns at 180° or until a skewer comes out clean
- take the foil off after 30 mins if you want a crispy top.
Cool in the tin for about 10minutes then put onto a wire rack for another 10- 20 before removing.
Slice, serve and enjoy.

Chocolate for Nuts- pecan or walnut .
Air fryer for oven - 180° for 40- 45 °mns
A.F for Slow Cooker- 4hrs on high.
Loaf tin for cake tin.
