Heat oven to 170C
Lime a baking sheet with greaseproof paper
In a large bowl mix the coconut , condensed milk and vanilla extract until combined
Whisk the egg white until you get firm(ish) peaks
Fold the egg whites into the coconut mixture
Using an ice cream scoop (or your hands ) place balls of the mixture onto the baking sheet
Cook for about 25 minutes
Cool on a rack
When cool enough to handle dip the bottoms in melted chocolate , place back on the greaseproof and leave till set
