Who doesn't love a corned. beef and potato pie? Pure comfort food!
You can use a frozen (defrosted) shortcrust pastry sheet if you prefer.
You can use sliced corned beef if you can't get the tin.
You can swap for a tin of spam or chopped pork too.
You can add any other veg you like.
Swap the potatoes for tinned ones if you like.
I sometimes add gravy granules to make a thick gravy as my daughter loves it that way.
Boil the potatoes until just soft but not mushy. About 20 minutes.
Put the carrot and onion in another pot. Just cover them with water and bring to the boil. Simmer for 15 minutes.
Drain the potatoes and add them into the pot with the carrot and onion.
Open the tin of corned beef and dice it into the pot. Crumble 2 oxo's into the pot. Mix everything together.
Add the mix to an oven dish.
To make the pastry:
Add the flour and fat to a large bowl.
Mix together with your fingers till it's like crumbs, add a bit of cold water to get a dough, roll out on a floured surface, then add it over the dish to cover the corned beef mix.
Trim and glaze with egg yolk.
Put in the oven for 20 mins, 200° or gas mark 6.
