This soup was brought about by finding out what I didn't have in the freezer -which was a bag of frozen veg but I had a little bag of steamed veg and set about making it into a lovely lunch by adding little bits of this n that-some peas, some herbs,stock etc and 15mns later I had 2 filling bowls of this. The porridge thickened it and added some creaminess to it. The Spinach added fibre and the chilli a little heat. This can be adapted to feed 4 easily as it is very versatile. You too can easily adapt this to suit your families needs by bulking out with more stock,a little bit more vegetables or some chopped chicken, bacon or crunchy croutons. Prep:-
Shred the Spinach if you prefer it that way.
Open the bag of vegetables and empty into a pot.
Add the stock and bring it to a boil
Lower the heat, add the Oats,herbs,garlic and chilli.
Simmer for 10mns
Add the Spinach and continue to simmer for a further 3-4mns
Turn the heat off
Add the Cream cheese and stir through till its smooth.
Serve with warm crusty bread
Tip:- Extra veg to add- Cauliflower,potatoes, leek,
