A quick, simple, and delicious midweek dish that's perfect for a busy family. Using mainly store cupboard staples it is quick to throw together. I've used Farfalle(bow ties) pasta as it's what I had in my cupboard as it's very versatile, but any pasta will do. I fried the chorizo to release the lovely smoky paprika flavours and the oils it contains, then used that to fry the onions. This all builds a depth of flavour to the dish. I used cream cheese as the base for the sauce but you can swap that with any sauce you prefer. This dish is easy to prepare and can be adapted to suit you and your families tastes. Prep:-
Grill the bacon and chop into bitesize pieces.
Chop the tomatoes.
Grate the cheddar and mozzarella.
Slice the chorizo
Boil a pot of water.
Add the pasta to the boiled water and cook as per instructions- 8-10mns appr
Meanwhile fry the chorizo on a low/ med heat for 2-3 mins till the oils are released and it changes colour,then remove from the pan and set aside
Add the onions into the same pan and fry till soft and golden in colour -(4-5 mns appr).
Lower the heat and add the tomatoes and stir through then add the bacon and chorizo
Add the garlic and stir through
Add the Spinach
Stir till everything is combined
In a separate pan add the butter and melt on a low heat
Add the cream cheese
Add the grated cheese,including the mozzarella
Add 2-3 ladlefulls of the pasta water -200ml appr- and stir till the sauce is blended and smooth. Season with pepper.
Pour the sauce over the bacon and chorizo mix and stir
Drain the pasta once cooked and add to the sauce (keep some of the water if needed)
Stir gently to combine. Taste, and season if required. Add a little water if the sauce is too thick.
Serve warm with a garnish of parsley,a sprinkle of parmesan and a slice of crusty garlic bread
