Dorset Apple Cake ( ish )

Yields1 Serving
 225g of chopped apples . A mix of bramleys and eaters
 1/2 sliced eating apple
 Juice of 1/2 lemon
 225g Plain Flour
 2tspns baking powder
 120g cold butter ( diced)
 120g Demerara sugar
 1 beaten egg
 3 tspns cinnamon
 An extra 50g Demerara sugar
 2-3 tblspns milk

Heat oven to 180C

Line a 7" round baking tin

Pour the lemon juice over the chopped apples

Put the sliced apple in a bowl with the 50g of Demerara sugar and 1 tspn cinnamon . Mix well to cover the apples

Sieve the flour , baking powder and cinnamon into a large bowl

Add in the butter and rub together as if making pastry

Stir in the chopped apples

Now add the beaten egg and 2-3 tblspns of milk to bring the mix together

Put into prepared tin , arrange the apple slices and sugar mix on top . Press down

Bake for 45- 60 minutes

Cool in the tin for about 10 minutes then put on a rack to cool

Serve warm as a dessert with cream or cold with a cup of tea
