Jacket Potatoes just got an upgrade
Wash the potatoes, prick with a fork, brush with a little oil,season with S&P and bake in the low rack of the Halogen for 20mns at 175° turn and cook for a further 20 mns or till just soft
Meanwhile fry or grill the bacon till cooked then chop roughly into small pieces.
Grate the cheese
Remove the potatoes from the oven,cut in half lengthwise and place half of them skin side down in a shallow dish
Sprinkle over 1/2 of the cheese and 1 tsp of paprika
Then add 1/2 of the bacon
Repeat these steps adding another layer of potatoes, cheese, paprika and bacon
Bake in the Halogen oven at 175° for 15-20 mns or until the cheese has melted and golden brown
Serve as a main dish with sour cream dip, coleslaw and salad or as a side dish with grilled chicken,pork chops or cauliflower cheese
Depending on your Halogen you may need to adjust your cooking times as some can be hotter than others so times do vary.
Alternatively you can skip step 1 and cook them in the microwave before layering and finishing off in the Halogen or main oven
