Love your Leftovers. 2 hamburgers, 2 portions of pasta, some peppers and half a jar of pesto. Doesn't seem like much but with a little bit of ingenuity this can be a speedy meal for 4. I used Farfalle pasta as that's what I had but you could use any pasta you have in your cupboards .You can also bulk it out with any extra vegetables you and your family likes, add some garlic bread and you have a filling meal in no time. Prep:-Chop the burgers and bacon into small chunks.
Dice the shallots, peppers and garlic.
Grate the cheese.
Shred the Spinach
Slice the tomatoes in half
Cover the pasta in salted boiling water and cook for 8-10 mns

Meanwhile add the oil to a pan and gently fry the shallots till soft then add the garlic

Add the peppers

Add the hamburgers

Add the bacon

Stir everything together

Add the Pesto then half fill the jar with water and add that. Add the sweet chilli sauce. Stir to combine

Add the cheese

Stir

Add the Cream cheese plus the S&P

Stir till everything is combined. Taste and adjust the seasoning if needed.

Add the cooked Pasta plus a little of the pasta water

Stir

Add the Spinach

Stir

Add the tomatoes and stir. Taste and adjust the seasoning if needed.

Serve warm with crusty bread. Garnish with a little more cheese.

Easy swaps:- Red Pesto for Pasta sauce
Bacon for Chorizo
Shallots for onion.
Sweet chilli sauce for tomato paste
Farfalle pasta for Penne or any pasta you have.

Another super recipe, this is definitely my new go to recipe for Bacon pasta – only had 40g of cheese, so added a bit more soft cheese and used peas instead of spinach (can’t eat it, due to IBS)
