Mick shared this recipe with me a few years back . He passed away in May - these are for him
Ingredients
Puff pastry
Strawberries
Lemon juice
Sugar - to taste
1 Beaten egg
Sugar to sprinkle
3 tsp Cornflour
Directions
Chop the strawberries
Put in a bowl
Sprinkle over the sugar if using
Pour over the lemon juice
Leave to one side for 20 minutes
Heat oven to 200c
On a floured surface roll out the pastry
Cut into 6 squares
Sprinkle the cornflour over the strawberries and toss to combine
Put a spoonful or 2 of strawberries onto each pastry square
Brush the edges of the pastry with egg wash
Bring one side of the square over to the other creating a triangle
Seal
Put onto a lined baking tray
Do this with all the squares
Brush with the egg wash
Sprinkle over a little sugar
Bake for around 20 minutes or until golden and risen
For a special treat when cold pipe in some whipped cream
