Midweek Curry – Serves 1

Sometimes you dont want to go to a lot of bother for just yourself but fancy something tasty.This hits the spot. WARNING the curry paste in the pic is lethal so get the loo roll in the fridge beforehand and a jug of cold water to put out the fire in your throat

Yields1 Serving
 One pot potato and mushroom curry
 3x sml potatoes chopped
 Ix sml onion chopped
 6-8 mushrooms chopped
 1x tsp curry paste
 300mlx stock
 1xtsp Chilli oil
 Coconut yoghurt (or milk.)

Heat oil in frying pan,add onion and potato

Cover and cook on low for 5 mns. Give them a wee shake occasionally to stop them sticking

Add the mushrooms and let them cook for another 5mins

Add the stock and curry paste letting it all simmer for10 mns or until potatoes are soft

The sauce will thicken and reduce

Just before serving add the yoghurt and stir it gently in

Garnish with spring onion. Serve with rice or flat breads.
