Onion Relish

Great in hotdogs or burgers , lovely in a cheese toastie

 4 large thinly sliced onions
 2tblspn oil
 3-4 garlic cloves grated
 1 tblspn paprika
 1 tspn onion powder
 1 tspn garlic powder
 0.5 cup white or white wine vinegar
 0.5 cup brown sugar
 3-4 tblspns tomato purée
 1 tspn salt
 1 tspn black pepper
 2 cups water
 1 tbspn cornflour
 2 tblspn water

Heat the oil in a large pan

Add the onions and stir to coat in the oil

Add garlic and mix

Stir through the purée, vinegar and brown sugar

Cook for a couple of minutes

Add the 2 cups of water and mix well

Bring to a boil

Turn down to a simmer

Cook until the mix has reduced by about a half and has thickened

Mix the cornflour and 2 tblspn of water

Add to the mix and cook for a couple more minutes

Pour into sterilised jars

Store in the fridge
