Do you have a glut of onions? Struggling for ideas to use them up?
Relish is the answer!
It's inexpensive and simple to make, very easy to adapt and so versatile too. It's a great accompaniment to any cheese board or picnic, but don't just stop there. Add it onto your burgers or hot dogs, add to stews, casseroles or mince dishes to give a little extra boost of flavour. It also makes a great edible gift at Christmas time.
I've used the Ninja foodi on the Sauté/Sear setting for this recipe but you can do this in a pot on the hob or in the Slow cooker too.

Prep:-
Peel, slice or chop the onions.
Chop the garlic.
Measure out your ingredients.
Switch the Foodi on to Sauté/sear Lvl 3
Add the butter and oil to the pot then add the onions.
Fry over a gentle heat (Lvl 2)
and sweat till soft
Add the garlic and chilli flakes.
Stir through.
Add the Soy Sauce, vinegar and water.
Stir through
Increase the heat (Lvl 4) till the mixture is boiling.
Boil for 5 mns until the liquid reduces slightly, then decrease to a gentle simmer (Lvl 2) for 15mns.
Add the Oats, stir through to thicken the mixture. Simmer for 5-10 mns stirring till the oats have dissolved, and the liquid has reduced further to become thick and sticky.
Taste and adjust the seasoning if needed.
Add more water if needed.
Too sweet? Add some salt.
Too tart? Add some sugar.
Allow to cool then decant into tubs or bowls.
Store sealed in the fridge for 4-5 days.
Or in sterilised jars for upto a year.
Can also be frozen for 3 months
Serve with cheese and crackers or chunky bread.
Easy swaps:-
Red onions for white/ brown or a mixture of any type.
White wine for red wine vinegar.
Soy Sauce for Balsamic.
Brown sugar for White.
Swap the Foodi for hob - same timings.
Slow cooker- low for 30 mns till onions soften then switch to high for 1- 2hrs or until the sauce reduces to a thick mixture.
Tip:- add some raisins or sultanas for a fruity twist.
Add some grated carrot to bulk it out a little.
