Pasta Primavera (sort of)
Ingredients
90 g Pasta per person
Selection of chopped vegetables
Olive or rapeseed oil
1 tsp Dry basil
1 tsp Dry oregano
Salt
Pepper
2 Cloves of Garlic
Parmesan cheese
Knob of butter
Fresh chopped parsley
Directions
Put a large pan of salted water on to boil
Chop all your vegetables to a similar size
If using frozen peas put in a sieve and pour over boiling water
Heat the oil in a large pan
Add the veg
Put the pasta in boiling water and cook as per the packet instructions
Keep the veg moving . Add the minced garlic and dried herbs
Stir well to combine
Cook until just softening add in the peas and stir .add the butter and stir it through the veg
Drain the pasta . Save some ideas f the water
Add the pasta to the vegetables. Stir well . Add salt me of the pasta water to create a little sauce
Serve . Scatter with fresh chopped parsley and Parmesan shavings if using
