Pea and ham soup
Ingredients
A knob of butter
1 finely chopped onion
1 litre of ham stock or vegetable stock . Fresh made is best but stock cubes will do )
500g frozen peas or petit pois
300g of chopped cooked ham with fat removed
Salt and pepper
A few mint sprigs
1 medium sized potato peeled and diced
Directions
Melt the butter in a saucepan and add in the chopped onions , cook until softened but you don't want any colour
Add in the cubed potato and toss in the butter
Pour over the stock and simmer until the potato has softened
Tip in the peas and bring to the boil
Blend , check seasoning and add if needed
Stir through the ham allow to warm and serve with a mint garnish
