A lovely speedy midweek dinner
Heat the dry pan till it's just smoking. Season the beef on both sides with S & P and brush with 1tbsp of oil then add to the pan
Fry for 2 mns on each side to sear then remove from the pan,cover with foil and set aside
Add the remaining oil to the pan along with the onion and fry gently till soft
Add the mushrooms,garlic and ginger and stir through
Add the pepper ( I used a mix of red and yellow but use whatever you have)
Stir through and fry for 2-3mns
Add the stock and simmer for 3-4 mns till its reduced and the flavour intensifies.
Add the peanut butter and stir through
Slice the beef into thin strips
Add the beef to the pan and gently stir through
Add the spinach and stir through
Simmer for 3-4 mns
Serve with rice and a garnish of parsley or shredded spinach
Sub the rice for Mash Potatoes, Roasties or chips
You can leave the beef out of the sauce to get the full flavour of the sizzler steak and just pour over the top when serving if you prefer
