Mayflower Curry Powder has been a godsend on many occasion. It has all the spices (cumin,turmeric etc) and thickeners you need to make a very tasty curry.This makes it very economical if you fancy a curry and don't have it all to hand. I use the extra hot blend which is actually not as scary as it sounds. Its still relatively mild in flavour with just a little bit of a kick to it and is perfect for the Slow Cooker as it cooks off some of the heat and leaves it with a full bodied flavour. There's this belief that you need to cook it on the stove to blend it smoothly but as you can see, you dont...it melts into the liquid in the SC leaving you with a smooth sauce. I've added an apple into this recipe as it goes really well with pork obviously, plus the natural sugars help make it slightly milder too but you can leave it out if you wish. I've also fried the leeks etc and the Pork before adding to the SC as this tenderises the meat and adds flavour but you can just skip this, add everything in at the beginning and follow the rest of the recipe. The choice is yours. Im sure you and family will enjoy this recipe but feel free to adapt it by swapping the pork for chicken,turkey or beef. Prep:-
Dice the Leek
Dice the Celery
Chop the Apple into small chunks
Measure out your sauce mix.
Melt the butter in a pan on a low heat.
Add the chopped Leek.
Add the Celery.
Add the Garlic & Ginger.
Stir through till softened (3-4mns) then place in the Slow Cooker.
In the same pan add the oil on med/high heat and add the pork.
Fry for 2-3 mns then turn over to the other side. You want it coloured but not cooked
Add the dry curry powder
Stir through till the pork is coated
Add the apple
Gently stir till its coated in the powder.
Add the mix to the Slow Cooker.
Add 200ml of water and stir through.
Cook for 5-6hrs on Low.
3-4hrs on high.
As you can see the liquid doubled to give a nice sauce
Add the yoghurt.
Stir through and add a little more water if required.
Taste and adjust the seasoning if needed.
Too spicy? Add a little sugar or more yoghurt.
Too mild? Add a little chilli flakes.
Serve hot.
Garnish with a little Coriander or Spring onion and serve with rice and crackers.
