Pork is sometimes thought of as dry so not everyone's favourite, but this recipe ensures its anything but dry. I used Loin steaks as they are economical but you could use chops or medallions. I also used my own stuffing (recipe on the website) but a pkt of stuffing is fine too. This is quite a substantial meal so its a good alternative to a Sunday Roast, but don't be afraid to cut it in half and serve in portions if you prefer- especially for the children where this amount of meat may be too much.. Its essentially a Pork & stuffing sandwich lol. This can be adapted to suit you and your families tastes so why not give this a try and let us know how you got on in the comments below. Prep :- Make the stuffing mix up as per instructions or use the recipe on the website.
Trim the fat off the steaks if you prefer it that way.
Slice the apple.
Cut the tinfoil into the size you need to cover each steak with a little extra.
Make 2 balls of foil and place these in the SC this keeps the steaks off any liquid that gathers in the bottom.
Lay out a sheet of foil.
Lay the bacon on to it-you can stretch it out a little if you want it thinner- I've used 4 rashers but 2-3 is plenty
Lay the pork steak on top of the bacon.
Add some sliced apple.
Add 1 heaped tbsp of stuffing over the apple slices.
Add some more apple slices on top of the stuffing.
Place another steak on top of the apple
Wrap the bacon around the pork steaks.
Wrap in foil.
Place onto the foil balls in the SC.
You could put potatoes or veg in instead of the foil balls.
No liquid is needed. Place the lid on.
Cook on High for 1 hr then Low for 4.
Alternatively Low for 7hrs or High for 3-4
Once cooked take out of the SC, unwrap, drizzle with honey and finish off under the grill for 5-10 mns each side to crisp up the bacon
Serve hot with Roast Potatoes, mash,veg of your choice & lashings of gravy.
