Heat the oil in a frying pan
Sauté the onions until starting to soften then add in the sage and fennel seeds

Roll out the shortcrust pastry . Line a greased pie dish
Mix the sausage meat in with the onion mix and season with salt and pepper
Put the sausage meat in the pastry base
Top with sliced tomatoes
Roll out the puff pastry and top the pie
Crimp to seal and brush with an egg glaze
Cook for about 45 minutes or until golden
