According to Wikipedia Braising, is a combination-cooking method that uses both wet and dry heats: typically, the food is first sautéed or seared at a high temperature, then finished in a covered pot at a lower temperature while sitting in some amount of liquid. With that in mind I've marinated my beef beforehand in Worcestershire Sauce which adds a depth of flavour, warmth and spice to the dish, coated it in flour which will thicken the gravy and Slow cooked it. Braising steak is typically a cheaper cut of beef so it lends itself really well to Slow Cooking and Ive used frozen vegetables which also keeps the cost down, as I had none fresh-a little tip here is to use less liquid because of this. Using frozen veg meant that there was no waste either, so it worked out really well as, apart from a bit of prep the SC took care of it all and the meat was melt in the mouth soft and full of flavour. Prep :-
Place the beef in a dish, pour over the Worcestershire sauce, cover with clingfilm and place in the fridge for 6hrs or overnight if possible,
Once the beef has been marinated take it out of the fridge 30 mns before cooking.
Heat 1/2 the oil in a pan,add the onion and fry for 3-4 mns.
Add the frozen veg and continue to fry for a few mns.
Add the peppers- I used a mix of red,green and yellow. And continue to fry for 2-3mns
Switch the Slow Cooker on to Low and add the veg.
Place the beef on a chopping board, pat dry and slice into 1" chunks. Add the remaining oil to the frying pan on a med/high heat and add the beef.
Fry for 3-4mns then add the flour
Stir through until the beef is coated in the flour making sure to get all the good bits off the bottom of the pan.
Add the beef to the slow cooker.
Add the marinade, stock cubes, water, garlic and herbs. Place lid on and cook on Low for 7-8hrs
An hour before serving add the mushrooms and stir through.
Add the frozen spinach, replace the lid and continue cooking for 1-2hrs
Once cooked stir through, taste and adjust the seasoning if needed.
Serve hot with mash potatoes and veg of your choice
