Prep:- Slice the Onion.
De seed and finely chop the chilli.
Mix all the dry spices together- this makes 2 portions so use half and store half for next time.
Make the Marinade by adding one portion of the dry ingredients with the oil and the Lemon Juice and as much or as little of the chopped chilli you want (if using.)
Place the Pork in a dish. Coat the Pork with the marinade - use gloves and rub it in, then cover and place in the fridge for 1-2hrs or longer if preferred
Add the sliced Onion to the Slow Cooker
Add the Pork
Pour over the Sweet Chilli Sauce and stir through.
I don't add any other liquid as the Slow Cooker will produce steam which will condense into liquid ensuring it won't run dry.
You can add some stock if you prefer.
Cook on Low for 6hrs or High for 3-4hrs
Once cooked, stir through again.
As you can see there is a little liquid at the bottom that will blend into the sauce.
Take 2 forks and pull the Pork apart in opposite directions until its shredded as roughly or finely as you prefer.
Add the Soy Sauce and stir through. .
Taste and adjust the seasoning if needed.
Place In a serving dish and sprinkle over the Sesame seeds if using.
There are many options you can use this for- Use in Pasta dishes, add to burger buns, Serve as prepared with mash potatoes or a side salad, use as a filling in tacos or pies.
